Healthy Comfort Food

Hey beautiful souls! After posting my favorite, go-to, super easy, healthy, comfort food meal last night on my Instagram story, so many of you DM’d me asking for the recipe. It’s literally something I’ve created while living in Vancouver. We don’t have a car here and I walk to the grocery store, so I like to try to keep my bags fairly light when walking back to our apartment. This little meal has been my “not have to think about it, but it sure is yummy” dinner. So, for those asking, here you go. Hope you LovE it!

 

1 can organic cannellini beans

1 jar Rao’s Arrabbiata Sauce

(I add extra garlic powder and oregano to mine)

2 large cloves of garlic minced

1 small handful of fresh basil, chopped

2 – 3 containers of whatever kind of organic mushrooms 🍄 you prefer

(I use a mix of oyster, baby Bella, baby shiitake and beech mushrooms)

1 bunch of asparagus chopped

1 small bundle of broccolini (chop off the lower half of the stem)

2 big handfuls of organic spinach

1/2 bunch of green onion chopped (green part only)

OPTIONAL 1 pkg of organic chicken sausage taken out of casing and molded into small meatballs

 

DIRECTIONS

Heat up the sauce and beans in separate pots while you cook the vegetables.

Add avocado oil (what I prefer to use) to a pan on medium heat, cook the garlic until fragrant, about 1 min. Add the asparagus and broccolini and cook until they just start to begin to soften, about 3 min. Add the mushrooms and cook until those begin to soften. Lower your heat and add the spinach and green onion until the spinach has wilted. Add salt and pepper to taste.

Add in the warm beans, warm sauce and chopped basil, mix together well and you have yourself a delicious meal.

If you are making the chicken sausage, heat the oven to 375 degrees when you begin heating the sauce and beans. In a nonstick pan over medium high heat, brown all sides of the meatballs. Once again, I prefer to use avocado oil in the pan. After they are browned, place the oven safe pan in the oven and bake for 10-12 min. Toss the meat balls with the veggies and beans and serve.

SOE tip – sometimes I need to add a little extra oil with the mushrooms and spinach. I LovE using “Chosen Foods” Avocado Oil Spray so I can control the amount I’m adding in and so that it’s evenly distributed.
