Homemade Muffins

I LovE a good muffin, but they are usually full of sugar, which sends my blood sugar sailing upward and then crashing down within a couple of hours, leaving me hungry for more. And let’s get real, muffins, bagels, pastries… they are all so easy to grab and go on those mornings when we’re strapped for time, but they usually aren’t the healthiest. So, I went on the hunt for some delicious, healthy, homemade muffin recipes for our family and thought I’d pass what I discovered along for you and yours.

When I am home for more than a few days, I plan our meals for the week and try and find recipes that make our mornings and midday hunger cravings a little easier to navigate. These muffin recipes have been our go to lately. They are so easy to make one night along side of whatever dinner you are already whipping up. In our house, they usually end up as dessert, so I double the recipe in order to have enough for a few days. All you have to do the following day or two is pop one in the toaster oven to reheat and to liven them up even more, our favorite way to eat them is with a little grass fed, raw butter or ghee. SOE tip…

Add in some extra protein… toss in a scoop of your favorite, non flavored collagen powder into the mix. 


Tip 2…

I use Xylo Sweet as a sugar substitute instead of any other sweetener they suggest, such as honey, agave, maple syrup or coconut sugar.
