In my veggie adventures I have acquired yet another delicious recipe! I LovE Thai food, but I rarely find myself cooking it at home. That’s all changing thanks to this healthy and delicious recipe by Minimalist Baker.
A few SOE tips…make sure you marinate the peanut tempeh the night before, so it can soak up all the flavor. I went to make this and had to postpone a night due to not reading the WHOLE, 2 part recipe. ☺ It was well worth the wait! Also, I really enjoyed using brown rice noodles instead of regular Vermicelli noodles. If you happen to whip this salad up, let me know what you think.
