I’m pretty sure we’ve all made avocado toast, maybe even a zillion and one versions of it. Avocado seems to have become a staple and like anything we eat often, it can get a bit boring unless we spice it up and do a little reimagining. Recently, I stumbled upon some DELICIOUS stuffed avocado recipes on Pinterest that have made eating avocado a whole lot more fun and tasty. Avocado is packed with nutrients (more potassium than a banana), tons of fiber and heart healthy monounsaturated fatty acids, just to name a few of its many gifts. So, if you’re ready to take your avocado game up a notch, check out some of my favorite concoctions below.
SOE tip – make sure you scoop out a large enough whole to properly hold the egg in place. It can slip and slide otherwise (personal experience)
SOE tip – swap the soy sauce for Bragg Organic Coconut Aminos for less sodium and zero soy.
If you don’t have enough time to do an elaborate recipe, my favorite way to eat an avocado is this…
Half the avocado
Take out the seed
Sprinkling sea salt and cayenne pepper on top
Squeeze a half lemon to finish it off
