Vegetarian Thanksgiving

Thanksgiving is a time where we are surrounded by those we LovE, joyful, grateful and stuffed full of food. Usually, there’s a bird involved, but since I’m eating less meat lately I wanted to dig around for some great Vegetarian/Vegan Thanksgiving meal options. What I ended up finding is YUMMY and simple, two things I am fond of. I’m not cooking this year, our bff’s are hosting dinner at their house, so I made an early Thanksgiving meal for the hubby and me to test out these recipes. You guys are gonna LovE them!

The southern girl in me loves collard greens! Collards are a great way to get your greens without it having to be the same old sautéed spinach. (still got love for you Spinach)
